Hummus de carbassa
Avui farem una variant de l’hummus tradicional, utilitzant una hortalissa de temporada que a mi m’agrada molt: la carbassa. El gust dolcet de la carbassa i el color que aporta aconsegueix que un simple entrant doni alegria a la taula. Jo el combinaria amb el Dip de remolatxa i magrana i amb el Dip d’albergínia i feta i aconseguirem uns entrants ben acolorits.
La recepta l’he vist al Food & Cook que es un blog de la revista Elle i l’he adaptat al meu gust. Crec que en aquest tipus de preparacions un pot improvisar i ajustar les proporcions al que tingui al seu abast o pugui reciclar sobrants d’altres receptes.
Necessitarem
350 gr de carbassa cuita
150 gr de cigrons cuits
3 cullerades de tahini
El suc de mitja llimona o llima
100 ml d’oli d’oliva
Sal
Opcional
1/2 culleradeta de comí mòlt
2 grans d’all
Per servir
Sumac o pebre vermell dolç
Doncs la preparacio no te secret. Coem la carbassa al forn (es pot bullir, però es menys gustosa). Traiem la polpa i la barregem amb els cigrons cuits, que haurem netejat i escorregut, i amb la tahini. Afegim el suc de llimona, els condiments que vulguem (all, comí) i ho passem pel minipimer mentre anem abocant l’oli d’oliva a raig fi de manera que la pasta vagi emulsionant i obtinguem una textura fina .
Ho servirem coronat de pebre vermell dolç o de sumac, que és una espècie molt utilitzada a l’Orient mitjà i que a mi m’agrada molt de sabor. Proveu-la.
