Clafotis de préssec en almívar

Al Curs intensiu de pastisseria que he fet a l’Escola de Cuina Mireia Carbó, he après una pila de coses. No obstant, a l’hivern també en podem fer amb fruita en conserva, com el préssec en almívar,

75 gr d’ametlla torrada
125 ml de llet
125 ml de nata líquida
4 ous
150 gr de sucre
20 gr de farina
1 pot de 800 gr de préssec en almívar (o 300 gr de cireres)

En primer lloc torrarem la farina d’ametlla en una paella, remenant contínuament per evitar que es cremi. També ho podem fer en el forn a 170 escampant-la per la safata i remenant-la un parell de cops.

Llavors, barrejarem amb el túrmix o minipímer tots els ingredients excepte la fruita i ho deixarem reposar un mínim de 12 hores a la nevera per què l’ametlla torrada s’hidrati.

En segon lloc, posarem la pasta brisa, que podem comprar feta o fer-la nosaltres mateixos, en el motllo, i la courem al blanc (és a dir, sense farciment i amb pesos a sobre per evitar que s’infli). Un cop esta pre cuita, l’omplirem amb la massa reservada i anirem col.locant el préssec en almívar escorregut i tallat a grills.

Ho courem uns 20 minuts a 180 º i comprovarem que ja esta cuit punxant-la amb un escuradents o una agulla.
