Galetes de tomàquet sec i formatge
Arriba Nadal i arriben els cursos de la Mireia Carbó per donar-nos un cop de ma amb la voràgine nadalenca. En aquest, la Mireia ens va ensenyar unes galetes fàcils i divertides que fan un bon paper en els entrants de Sant Esteve. Aquí les teniu:
Necessitem
75 gr tomàquet sec italià
50 gr de Grana Padano rallat
150 gr de farina
60 gr de mantega a temperatura ambient
1 culleradeta de llevat Royal
1 pessic d’orenga
1 ou
Sal
Abans de començar, traiem la mantega de la nevera, ja que ha d’estar tova (pomada). També posem els tomàquets secs en remull (no utilitzem els que es conserven en oli). Tallem els tomàquets a dauets menuts i els reservem.
En un bol, barregem la mantega i l’ou batut. Costarà molt de lligar i quedaran grumolls, però val la pena esforçar-s’hi una mica i ja lligarà quan afegim la resta d’ingredients. Llavors, afegim el Grana Padano rallat i els dauets de tomàquet i ho barregem. Veurem com la barreja es començarà a lligar. Finalment hi posarem la farina, l’orenga, el llevat i la sal i ho barrejarem
Llavors és l’hora de pastar-ho sense pietat sobre el marbre. Cal trencar i juntar la massa fins que quedi una bola ja lligada. Agafarem bocins i en farem boletes d’uns dos o tres cm de diàmetre, procurat que tinguin la mateixa mida. Un cop tenim les boletes les aixafem amb un plat o corró de manera que quedin finetes. No importa que les vores quedin irregulars.
Les posem a la safata del forn sobre un paper de coure i les enfornem a 180ª. fins que estiguin daurades. Vigilem, que es couen de pressa.
Un cop cuites, es poden guardar en una llauna hermètica o en un tupper per evitar que es remullin.
