Pastis de bolets amb salsa de ceps

El primer dia de l’any és l’aniversari de la Sofia, la filla de la meva amiga Marga. I com que tenia la casa invadida de gent i de celebracions, em va demanar ajuda per a fer el dinar. Vam resoldre el segon amb un rosbif amb puré de patates, i els postres amb un coc de poma i avellanes. Però el primer havia de ser lleuger i fàcil de servir.

I llavors li vaig proposar fer un pastís de bolets amb salsa de ceps. Havia trobar diverses receptes com la del Pastís de bolets de Cuines/TV3, el Pastis de bolets de No tot son postres a la cuina o el Pastís de bolets amb salsa de ceps del web Festa.cat. Però al final, mirant-me’ls tots, vaig fer la meva pròpia interpretació que és la que us explico.  El podeu fer amb bolets de temporada, congelats o de pot

Necessitem
200 gr de xampinyons
600 gr de bolets silvestres de La Sirena
24 gr de trompetes de la mort seques
1/2 manat d’alls tendres
1 ceba petita
6 ous
200 ml de nata líquida per cuinar
Sal i pebre

Per la salsa
50 gr de ceps secs
200ml de nata liquida
25 gr de mantega (opcional)
sal

En primer lloc tallen la ceba i els alls tendres a bocins ben petits i els sofregim amb una mica d’oli vigilant que no es cremin. Un cop han agafat color i afegirem els xampinyons tallats a bocins, les trompetes remullades i els bolets congelats. La idea es que es sofregeixin i deixen anar l’aigua.

Un cop estan cuits i s’ha evaporat l’aigua sobrera, ho retirem del foc i triturem amb el minipimer. Hi afegim els ous batuts i la nata líquida i ho barregem, salpebrant-ho al nostre gust.

A banda, pintem amb oli i un pinzell uns motllos de flam individuals (o un de mes gros si el volem en format pastís) i els omplim amb la mescla. Els posem al forn al bany Maria a 180º uns 30-40 minuts. Si ho fem sense bany Maria, anirà mes depresa però haurem de vigilar que no quedi massa ressec. Comprovarem que es cuit punxant-lo amb una agulla o broqueta.

Per a fer la salsa de ceps, els remullarem, i els saltejarem a la paella. Un cop hagin tret l’aigua i estiguin cuits, li posarem la crema de llet i ho salarem. Si volem que la salsa tingui mes cos, hi podem afegir una mica de mantega. Ho retirarem quan tot estigui ben lligat i ho passarem pel minipimer

Deixarem que els flams es refredin abans de treure’ls del motllo. Els servirem amb la salsa de ceps al damunt.
